Mung bean pasta is not very popular pasta type, but very nutritious and healthy though. If you are trying to stay away from wheat pasta and for this reason you cut consumption of your favorite dish, that is an amazing solution how to eat sin-free pasta and don’t punish yourself for eating cheat food.

This dish is very nourishing  and is a perfect meal for those, who do sport a lot and need good nutrition, rich in protein and other goodness. One serving contains 28 g of protein, which is almost half of daily intake.

I have tried new cashew cream recipe flavoring it with truffles, which I brought some time ago from Italy. I did like it a lot and I am sharing it with you just as a new idea for cashew cream flavor, but trust me this pasta will be super delicious even without truffles and this is not a must for this dish.

CALORIES: 465 calories (carbs 36g *sugars 10g, protein 28g, fats 22g)


Mung bean pasta – 60 g

Peas green – 1/3 of cup

Mung bean sprouts – 3 tbsp

Cashew cream – 2 tbsp (20g cashews, water, lemon juice, salt)


Vegetable oil – 2 tsp

Lemon juice – 1 tbsp

Cilantro fresh

Cucumber – 1 medium

Vinegar – 1 tbsp

Coriander grind – 1 tsp

Salt – pinch

! For more servings multiply the ingredients by the number of portions.



Start your cooking with marinating cucumbers, so they are ready when you finish cooking the pasta.

  1. Slice cucumbers and put it in vinegar with salt and grind coriander, stirring them from time to time.
  2. Cook your pasta boiling it 4 minutes in the water.
  3. Fry the peas and mung bean sprouts in olive oil during 5 min and add cooked pasta. Bring heat to low and stew all together during few minutes. Add salt to taste.
  4. Add cashew cheese, mix all together and remove from heat.

Serve the pasta on cucumber pillow with fresh coriander and drizzles of fresh lemon juice.
