Why do I like to play with different ingredients to discover new dressings?

The biggest problem for most people to start eating plant-based is the taste of food. Imagine to say no to meat, neither cheese, other milk products or eggs.. and any dish seems to be tasteless and boring. But this is not truth, if you use simple tricks. The adventure of a plan-based diet begins with getting to know new spices, different sauces and dressings. You can cook any vegetable dish so delicious as nothing else, if you follow some nice recipes for flavouring your food.

Lychee season is coming and I have started to experiment with this nice fruit, which is having very special awesome taste. Here is my new recipe for salad dressing based on fresh lychee, which will make your salads even more interesting and rich in taste.

CALORIES/per serving: 105 cals (9,5g fats)


Lychee – 6 pieces

Vegetable oil – 4 tsp *grapeseed or olive oil are very nice here

Lemon juice – 1 tbsp

Apple vinegar – 1 tsp

Dijon Mustard – 1 tsp

Garlic – 1/2 clove

Rose pepper and salt – by taste


CALORIES/per serving: 122 cals (12g fats)


Lychee – 6 pieces

Vegetable oil – 5 tsp *my choice is sesame or hempseed (olive oil also suits well)

Lime juice – 1 tbsp

Soy sauce – 1 tsp

Ginger juice – 1 tsp

Chilli powder and salt – by taste


Get rid of the lychees peel and kernel and blend them in food processor until it becomes homogeneous. Add all the remaining ingredients and mix until smooth.

The sauces based on lychee suits any semi-sweet salads very well. For example, persimmon salad,  salads with mango, apple, pear or peach. As well as vegetable salads, for example with cucumber, raw beetroot or celery root.
