APPLE-CINNAMON PANCAKES WITH ROSE WATER AND ROSE JAM

Every woman likes to receive roses as a gift. But we have different tradition at home to bring me mangoes or apples that I eat a lot, or rose jam and rose water instead of roses works even better, so I could eat them, not just smell. Haha! 🙂

This recipe probably doesn’t look like a standard cooking recipe, but I can’t stop myself complicating it including a lot of unusual and difficult to find ingredients sometimes.

But don’t reject the idea of cooking it if you are missing rose water or rose jam. You can play with flavours. The main idea in this dish is to use apple in the dough, what was my goal to achieve in the recipe. And this is the main thing I am in love with in it.

Have you ever tried rose jam? I doubt that it can be found in our local shops, but it is very specific for the Bulgarian cuisine. If you have ever been to Bulgaria, you couldn’t pass by rose jam. It is sold all over around and is usually brought by visitors as souvenir.

In fact, this is the only thing I have borrowed from Bulgarian culture. The taste is very unique and it is like when you are smelling extremely fragrant rose and you can’t get enough just smelling it and you start eating it.

APPLE-CINNAMON PANCAKES WITH ROSE WATER AND ROSE JAM

INGREDIENTS

for dough

Oat flour - 50 g

Chia seeds - 1 tbsp

Apple - 1/2 of small

Raisins - 1 tbsp

Rose water - 1 tbsp (optional)

Cinnamon - 1 tsp

Baking powder - according to instruction (usually 1 tsp)

Salt - pinch

Water - 120 ml

for cooking and serving

Coconut oil - 1 tsp

Rose jam - 1 tbsp (optional)

INSTRUCTION

  1. Mix oat flour with chia seeds, raisins, baking powder, cinnamon and salt in a bowl. Grate apple and add to the the mix.
  2. Add 1 tbsp of rose water and 120 ml of drinking water, and whisk all together. Give it to rest for 5-10 min.
  3. Grease your pan with coconut oil and bake a small pancakes using 1 tbsp of dough for each, pressing the dough with the spoon to make them more flat.
  4. Serve it warm with a rose jam on top. Decorate with nuts or fresh pieces of apple, sprinkle with grind cinnamon.

For more servings multiply the ingredients by the number of portions.

The same recipe can be used for cooking muffins, if you are lazy to bake pancakes or want to serve them as a dessert. Simply add more baking powder to make it more puffy and reduce water to 100 ml. Additionally, put some nuts in the dough as your own twist in the recipe.
